Ingredients

500 g eight-eggs Wide noodles,
250 g of sweet fennel,
100 g of leek,
200 g of smoked salmon,
0,5 dl of olive oil,
50 g of butter,
zest of 1 lemons,
2 dl of cream,
ground pepper  
Clean and wash the vegetables.
Slice the leek and the sweet fennel and then cut in half, and chop the green of the sweet fennel coarse.

Preparation

Shred the zest of the lemon (only the yellow part), cook for 2-3 seconds in hot water then rinse. Repeat the last step and set aside.
Fry the onion in oil until golden then add the butter and the sweet fennel. Add some salt and pepper and stew in some water until crisp. Add the cream, the zest and some of the cooking liquid of the pasta. When boiling, add the green you set aside and the shredded fish. Mix then stir with the non-rinsed pasta and ready to serve.
