Farfalle is a Bolognese-style rolled pasta. Its design gives it different thicknesses and textures in the middle and on the edges, a varied surface that is felt to great effect while eating. It is best when it is still al dente in the middle. It is one of the most cheerful shapes in modern cuisine, and it is also a great match for the most varied flavour combinations.
